Ingredients

  • 2 hard-boiled eggs
  • 1 can (400g) chickpeas, drained and rinsed
  • 2 cups fresh spinach
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. Begin by boiling the eggs until hard-boiled, approximately 9-12 minutes, then cool and peel them.
  2. In a bowl, combine canned chickpeas, olive oil, and your choice of spices such as cumin, paprika, and chili powder.
  3. Roast the chickpeas in an oven preheated to 200°C (400°F) for about 20-25 minutes until they are crispy.
  4. While the chickpeas roast, wash and dry the spinach leaves.
