Spicy Lentil and Egg Protein Power Bowl

Ingredients

  • 1 cup lentils
  • 1 tablespoon oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 1 tablespoon curry powder
  • 1 teaspoon turmeric
  • 4 cups vegetable broth
  • 4 eggs
  • Fresh spinach
  • Fresh cilantro
  • Black pepper to taste

Instructions

  1. Rinse and drain 1 cup of lentils; set aside.
  2. In a pot, heat 1 tablespoon of oil over medium heat, then add chopped onions and cook until translucent.
  3. Add 2 cloves of minced garlic, 1 tablespoon of ginger, and sauté until fragrant.
  4. Stir in 1 tablespoon of curry powder, 1 teaspoon of turmeric, and mix well.
  5. Add the lentils and 4 cups of vegetable broth; bring to a boil.
  6. Reduce heat and simmer for 25-30 minutes until lentils are tender.
  7. Meanwhile, bring water to a boil in a separate pot; gently add 4 eggs and boil for 6-7 minutes for soft-boiled texture.
  8. Remove eggs, place in ice water to cool, then peel and slice in half.
  9. In a bowl, serve lentils topped with halved eggs and fresh spinach.
  10. Garnish with fresh cilantro and a sprinkle of black pepper.
