Ingredients

  • 1 cup quinoa
  • 2 large eggs
  • 2 cups broccoli florets
  • 3 tablespoons natural peanut butter
  • 1 tablespoon soy sauce
  • 1 teaspoon sriracha
  • Olive oil
  • Salt and pepper, to taste
  • Sliced green onions (optional)
  • Sesame seeds (optional)

Instructions

  1. Start by cooking 1 cup of quinoa according to package instructions. Set aside once cooked.
  2. Preheat your oven to 400°F (200°C). Spread broccoli florets on a baking sheet and drizzle with olive oil, salt, and pepper. Roast for 15-20 minutes until tender.
  3. While the broccoli roasts, prepare your soft-boiled eggs by bringing water to a boil in a small pot. Gently add eggs and boil for 6-7 minutes. Transfer to ice water to stop cooking, then peel.
