Ingredients

  • 200g udon noodles
  • 150g tempeh, cubed
  • 3 tablespoons peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon chili sauce
  • 1 tablespoon vegetable oil
  • 100g fresh spinach
  • Water as needed

Instructions

  1. Cook udon noodles according to package instructions, then drain and set aside.
  2. In a bowl, mix together peanut butter, soy sauce, chili sauce, and a splash of water until smooth to create the spicy peanut sauce.
