Ingredients

  • 400g lamb slices
  • 1 tablespoon Szechuan peppercorns
  • 2 tablespoons soy sauce
  • 3 cloves garlic, minced
  • Salt to taste
  • 200g hand-pulled noodles
  • 2 bok choy heads
  • 2 tablespoons vegetable oil
  • 500ml water or broth
  • Chili oil for drizzling

Instructions

  1. Start by marinating the lamb slices with Szechuan peppercorns, soy sauce, garlic, and a pinch of salt for at least 30 minutes.
  2. While the lamb is marinating, prepare the hand-pulled noodles according to package instructions and set aside.
  3. In a pan, heat vegetable oil over medium heat and add the marinated lamb slices. Cook until browned on both sides.
  4. Add in water or broth to the pan with the lamb, cover, and simmer for 15 minutes to let the flavors meld.
  5. In another pot, blanch the bok choy in boiling water for 2-3 minutes until vibrant green, then drain and set aside.
  6. Once the lamb is cooked, remove it from the pan and let it rest while keeping the broth simmering for additional flavor.
  7. To serve, place a serving of the hand-pulled noodles in a bowl, add slices of lamb, spoon over the broth, and garnish with bok choy and chili oil.
  8. Adjust the spice level with more chili oil if necessary and enjoy your homemade Szechuan experience!
