Ingredients

  • 1 can (400g) chickpeas
  • 1 cucumber
  • 200g cherry tomatoes
  • Handful of fresh parsley
  • 3 tablespoons tahini
  • 1 lemon (juiced)
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Rinse and drain 1 can (400g) of chickpeas, then place them in a large mixing bowl.
  2. Dice 1 cucumber and add it to the mixing bowl with the chickpeas.
  3. Halve 200g of cherry tomatoes and include them in the bowl.
  4. Chop a handful of fresh parsley and mix it into the salad.
  5. In a small bowl, combine 3 tablespoons of tahini, juice of 1 lemon, 1 tablespoon of olive oil, salt, and pepper to make the dressing.
  6. Drizzle the tahini dressing over the salad and toss everything together gently until well combined.
  7. Serve immediately or let chill in the refrigerator for about 30 minutes for the flavors to meld.
