Savory Teriyaki Eggplant Protein Bowl Over Soba Noodles

Ingredients

  • 2 medium eggplants
  • 100ml soy sauce
  • 50ml mirin
  • 2 tablespoons sugar
  • 200g soba noodles
  • 1 tablespoon sesame seeds
  • 2 green onions, chopped

Instructions

  1. Preheat your oven to 200°C (400°F).
  2. Slice the eggplants into rounds about 1 cm thick.
  3. In a bowl, mix together soy sauce, mirin, and sugar to create the teriyaki glaze.
  4. Brush the eggplant slices with the teriyaki glaze on both sides.
  5. Place the glazed eggplant on a baking sheet lined with parchment paper.
  6. Roast the eggplant in the oven for about 20-25 minutes, turning halfway through until golden brown.
  7. Meanwhile, cook the soba noodles according to the package instructions.
  8. Drain the noodles and set them aside.
