Ingredients

  • 200g quinoa
  • 150g black beans, drained and rinsed
  • 200g corn, fresh or frozen
  • 1 ripe avocado
  • 100g tomatoes, diced
  • 30g cilantro, chopped
  • Juice of 1 lime
  • 60g plain yogurt
  • Pinch of cayenne pepper
  • Salt to taste

Instructions

  1. Cook the quinoa according to package instructions and set aside to cool.
