Ingredients

  • 2 chicken breasts (about 300g)
  • 2 tablespoons olive oil
  • Juice of 1 lime
  • Salt to taste
  • Pepper to taste
  • 150g spinach or mixed greens
  • 1 ripe mango
  • 1 cup pineapple chunks
  • 2 tablespoons coconut flakes

Instructions

  1. Start by marinating chicken breasts in a mixture of olive oil, lime juice, salt, and pepper for at least 30 minutes.
  2. Preheat your grill or grill pan over medium heat.
  3. Grill the marinated chicken for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C).
