Ingredients

  • 200g cod fillet
  • 150g brown basmati rice
  • 150g fresh spinach
  • 50g raw cashews (soaked)
  • 1 tablespoon turmeric powder
  • 1 tablespoon olive oil
  • Juice of 1 lime
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 200°C (400°F).
  2. Season the cod fillet with turmeric, salt, and pepper.
  3. Place the seasoned cod on a baking sheet and bake for 12-15 minutes or until fully cooked.
  4. While the cod is baking, cook the brown basmati rice according to package instructions.
  5. In a pan, heat a small amount of olive oil over medium heat, add the spinach, and sauté until wilted.
