Ingredients

  • 2 lamb chops
  • 2 teaspoons za'atar
  • Salt and pepper to taste
  • 1 cup lentils
  • 1 medium eggplant
  • 2 tablespoons olive oil
  • 2 tablespoons tahini
  • 1 tablespoon lemon juice
  • Fresh mint leaves for garnish
  • Pomegranate seeds for garnish

Instructions

  1. Preheat your oven to 200°C (400°F).
  2. Season the lamb chops generously with za'atar, salt, and pepper.
  3. Heat a skillet over medium-high heat and sear the lamb chops for 2-3 minutes on each side until browned.
  4. Transfer the lamb chops to the oven and roast for 10-15 minutes to your desired doneness.
  5. While the lamb is cooking, rinse the lentils in cold water. In a pot, add lentils, cover with water, and boil until tender, about 15-20 minutes. Drain and set aside.
