Ingredients

  • 1 cup bulgur wheat
  • 1 medium eggplant, sliced
  • 1 red bell pepper, sliced
  • 2 tablespoons za’atar seasoning
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 2 tablespoons tahini
  • Fresh herbs for garnish (parsley or cilantro)

Instructions

  1. Preheat the oven to 200°C (400°F).
  2. In a large bowl, toss eggplant and bell peppers with olive oil, za’atar, salt, and pepper until well coated.
